Rosé Wines - 2020
A nice summer wine, perfect for a sweet and sour pairing !
Vineyard
The parcels are located in Bellevigne-en-Layon (Faye d''Anjou and Thouarcé). The soils are made from clay and schist.
This rosé is made from a blend of grapes which are the following: Cabernet Franc (50%) and Cabernet Sauvignon (50%).
Harvest
Half of the grapes are handpicked and put in buckets. They are then brought to the winepress by a dump truck vehicle.
The hoist and vibrations mechanism of the truck allow the grapes to let down gently in the winepress.
The other half is picked mechanically by a dump truck vehicle also which allows to transfer the grapes in another truck to bring the fruits to the winepress.
Winemaking
Before the alcoholic fermentation in the stainless steel vat, we proceed to a skin maceration from the grapes with the juice for a few hours (12) to let the tannins contained in the skin give the right colour to the juice.
Then we go for the alcoholic fermentation and the ageing of the wine until the month of February, where the wine is bottled.
Duration: 2 to 5 years
