White Wines - 2014
Very popular around the world but very different in each country and vineyard
Vineyard
The vines are located in Bellevigne-en-Layon (Faveraye-Mâchelles).
The soil is made of gravels.
Sauvignon is all made from one grape, which is Sauvignon Blanc.
Harvest
The grapes are also handpicked in September and brought to the winepress to extract the juice.
Winemaking
After the press, the juice is sent to stainless steel vats for the fermentation.
Just before the sugar turns into alcohol, the first step is a skin maceration of the juice with the grapes skins for 6 hours, at a cold temperature.
Then after these 6 hours, the alcoholic fermentation can take place.
When it is over, the wine undertakes the second fermentation which lasts until January the next year.
The bottling is made in February.

Tasting
Sauvignon is a dry white wine with a pale green colour.
A very fruity and floral nose, with boxwood aromas and white fruits as pear or apple.
On the palate, it is very smooth and fruity, although there is a slightly acid finish.
Tasting temperature: 12°C to 16°C
Sommelier's advice:
Best served fresh between 8°C and 10°C. Enjoy as an appetizer or with cold starters.
As the Anjou Blanc, Sauvignon is perfect with Loire fishes, scallops and seafood.
